Raw herring is a Dutch tradition. There is even an event in the summer, Vlaggetjesdag Scheveningen, where the arrival of the New Dutch herring year is celebrated. You can get yourself a portion of fresh herring at a street-side herring stall or, even better, at Vishandel Theo van de Geest in Amsterdam Zuidoost. Served either in a bun, often covered in onions, or in a small dish for you to pick it up by the tail and drop it straight into your mouth.
