The Skinny Pancake has occupied its spot down on the Burlington waterfront since 2007, and has expanded to Montpelier and Hanover, NH. As the name indicates, the restaurant serves up all variety of sweet and savory crepes, and prides itself on sourcing its ingredients from local producers.
Skinny Pancake is a popular breakfast spot, and on weekends at the Burlington location you’ll usually find a line out the door (you order at the counter and then find a seat inside or on the outdoor patio — if you’re lucky). Share an order of poutine — the Quebecois specialty consisting of fries covered with gravy and cheese curds — or go with the breakfast burrito, made with a scallion crepe. For savory crepes, try the Déjà vu, with Vermont sausage, Cabot cheddar and apples, served with local maple syrup, and for dessert you can’t go wrong with the classic Nutella crepe. If you’re not in the mood for a skinny pancake, you can stick with a panini or locally sourced salad.
The restaurant has also become a popular night spot – they have a great beer selection and host events and live music throughout the year (like the bluegrass brunch on Sundays.)
