Carr Valley Cheese sells good stuff. Really good stuff. Sid Cook, a fourth-generation master cheesemaker, runs the enterprise And he clearly knows what he’s doing.
How could he not? Cook started out riding his trike around the family’s cheese vats, crafted his first batch of cheese at 10 and nabbed his cheesemaking license at 16. Today, he’s won more top national and international awards than any other cheesemaker in all of North America.
Carr Valley’s specialty is its artisanal, aged Cheddars, which are superb. But the company produces more than 50 original varieties using cow, goat and sheep milks, such as Cocoa Cardona, an aged Cardona rubbed with cocoa powder, and its olive-oil-cured Gran Canaria.
The Dells outlet is bright and spacious, and samples are always available. The store also carries a small number of complementary products like jellies, jams, honey, syrup and sausage.
